Of all the food-related national holidays out there, June 17th’s has to be one of our favorites. It’s National Eat Your Vegetables Day (a name that pretty much speaks for itself)! Whether you love ‘em, hate ‘em, or tolerate ‘em, eating a wide range of fresh vegetables is a key part of a balanced diet, and this holiday is the perfect excuse to feel good about this healthy habit. 

A recent survey reported that while just 5% of Americans consider themselves vegetarians, the number of “flexitarians” is higher than ever, at 36% of the population. So while not everyone is eating all veggies all the time, more and more people are making it a point to eat a more plant-based diet. This is great news for our health as a country, as there are many important benefits of eating vegetables.

  • Nourishes your body with hundreds of of different healthy nutrients
  • Lowers your risk of heart disease, stroke, and diabetes
  • Regulates your blood sugar and appetite
  • Lowers your blood pressure
  • Is associated with a lower risk of cancer

  • Supports eye health and keeps your vision sharp

We know, we know-- you know you’re supposed to eat them. But if you’re not the biggest veg fan, it can be hard to get into the habit. Here are some ideas for easy (and tasty) ways to meet your daily veggie needs:

  • Try new recipes where veggies are the star
  • Add a Meatless Monday to your weekly food schedule
  • Add veggies to sauces, stews, smoothies, baked goods, and more
  • Buy veggies in a variety of different colors to inspire you. We eat with our eyes, after all!
  • Find a veggie you like to snack on
  • Make your own stock using veggie scraps
  • Explore different ways of preparing veggies: grilling, spiralizing, roasting…the possibilities are endless!
  • Try to eat according to the season for veggies that are at their peak

It’s the perfect time of year for finding veggies that are at their peak, since summer means that local farmers’ markets are in full swing. Aside from the fact that buying from a farmers’ market supports local agriculture, eating seasonally has a host of its own benefits, including more nutritious produce that tastes better and that costs less. And because seasonal produce typically has less of a distance to travel before it’s purchased, it’s also better for the environment than out-of-season fruits and veggies. So, go ahead and take full advantage of this holiday and this entire summer season to Eat Your Vegetables!
