Birthday Cake Cheesecake Bars

Made with only 6 ingredients, these simple refined sugar and creamy birthday cake cheesecake bars are delicious!
Ingredients
Crust:
- 2 cups LesserEvil Birthday Cake Mini Cookies
- 1/4 cup coconut oil
Cheesecake:
- 2 cups raw cashews, soaked and drained
- 1/3 cup maple syrup
- 1/3 cup coconut oil
- 2 ½ tbsp lemon juice
- 2 tsp vanilla extract
- ¼ cup rainbow sprinkles
Instructions
- Soak raw cashews in boiling water for 2-24 hours.
- Crumble the birthday cake cookies into a sand like texture.
- Add coconut oil to the cookie crumbs and stir well.
- Press firmly into a lined 8×8” square pan.
- Blend all filling ingredients on high until very smooth.
- Pour cheesecake filling on top of the crust and sprinkle with extra sprinkles.
- Freeze for a minimum of 4 hours to overnight.
- Slice, top with dairy-free whipped cream and enjoy! Keep leftovers in the freezer.
