Made with only 6 ingredients, these simple refined sugar and creamy birthday cake cheesecake bars are delicious!


  • 2 cups LesserEvil Birthday Cake Mini Cookies
  • 1/4 cup coconut oil


  • 2 cups raw cashews, soaked and drained
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil
  • 2 ½ tbsp lemon juice
  • 2 tsp vanilla extract
  • ¼ cup rainbow sprinkles


  1. Soak raw cashews in boiling water for 2-24 hours.
  2. Crumble the birthday cake cookies into a sand like texture.
  3. Add coconut oil to the cookie crumbs and stir well.
  4. Press firmly into a lined 8×8” square pan.
  5. Blend all filling ingredients on high until very smooth.
  6. Pour cheesecake filling on top of the crust and sprinkle with extra sprinkles.
  7. Freeze for a minimum of 4 hours to overnight.
  8. Slice, top with dairy-free whipped cream and enjoy! Keep leftovers in the freezer.
