Grilled Vegan Caesar Salad with Quinoa

Grilled romaine hearts topped with quinoa, sun-dried tomatoes, green onions, and drizzled with a dairy-free creamy Caesar salad dressing.


Salad Ingredients

  • 20 romaine hearts 
  • 1/2 cup of cooked quinoa
  • ¼ cup sundried tomatoes
  • ¼ cup green onions
  • ½ tsp. fresh cracked pepper
  • ½ cup homemade vegan Caesar dressing 
  • 1 cup LesserEvil Himalayan Sea Salt Puffs

Homemade Vegan Caesar Dressing Ingredients

  • 1 cup of soaked raw cashews 
  • 1.5 tsp. whole capers
  • 1 tsp. caper brine
  • 1 tbsp. dijon mustard 
  • ½ tsp. salt 
  • ½ tsp. pepper
  • 1 tsp. vegan worcestershire sauce  
  • 1.5 tbsp. nutritional yeast 
  • 3 medium garlic cloves
  • 2 tbsp. lemon juice 
  • ¾ cup oat milk
  • 2 tbsp. water to desired consistency


Instructions:

  1. First soak cashews in warm water for 24 hours to soften them. Alternatively, you can soak them in boiling water and cover for 4 hours. 

  2. When you are ready to make the salad, bring 1 cup of water to a boil and add ½ cup of quinoa. Cover and cook for 15 minutes. Remove from heat and leave covered for 20 minutes while you prepare the rest of the salad. You will have a little extra quinoa but it can easily be stored for up to 5 days in an air tight container in the fridge and used on other salads. 

  3. Drain the cashews and blend all the dressing ingredients together on high until smooth and creamy.

  4. Brush each romaine heart with olive oil and then quickly grill each side for 1 minute max. The goal here is to enhance the flavor and create char marks, but not to cook the lettuce. 

  5. Take the lid off of the quinoa and fluff the grain with a fork. Transfer ½ cup of the cooked quinoa to a bed of grilled romaine hearts and top with sundried tomatoes and sliced green onions. 

  6. Drizzle with vegan Caesar dressing, add fresh cracked pepper, and top with Himalayan puffs! 

  7. You can keep the lettuce in boats or chop the salad. Enjoy!
