Huevos Rancheros Egg White Curl Nachos

Huevos Rancheros Egg White Curl Nachos

1 bag - Lesser Evil Huevos Rancheros Egg White Curls

1 cup shredded mozzarella cheese

½ cup shredded cheddar cheese

½ cup crumbled cotija cheese

1 cup - black beans (drained, from can)

1.5 jalapenos, sliced

¼ bunch cilantro, chopped

1 avocado, cubed


Pico de Gallo

1 pint cherry tomatoes, chopped
½ medium red onion, chopped fine
½ jalapeno, chopped fine
¼ bunch cilantro, chopped
1 lime, juiced
½ tsp salt + more to taste
Black pepper, to taste


1. Preheat your oven to 350F and line a baking tray with parchment paper.

2. Pour your Lesser Evil huevos rancheros egg white curls on top of the parchment-lined baking tray in a single layer.

3. Evenly spread your mozzarella, cheddar, cotija, and black beans on top of the Lesser

Evil egg white curls.

4. Move to the oven and bake for 10-15 minutes, or until cheese has started to bubble.

5. While your Egg White Curls are in the oven, prep your pico de gallo. Add all ingredients

to a bowl and stir until combined. Add additional salt, ground black pepper and lime juice

to taste.

6. Remove Egg White Curls from oven and load up with the toppings - jalapeno slices,

chopped cilantro, avocado cubes, and homemade pico de gallo.

7. Serve and enjoy immediately!
