Pink Grapefruit Popcorn Tart


These bright, zesty, and healthy pink grapefruit mini tarts are the perfect spring and summer dessert! They are light and refreshing, vegan, and made with only natural ingredients! Top with more LesserEvil Pink Grapefruit Popcorn for the perfect citrus treat. 




  • 2 c. Pink grapefruit popcorn by LesserEvil
  • 2 tbsp. ground flaxseeds 
  • 6 Medjool dates, soaked and softened
  • 2/3 c. Almond flour
  • 1 c. Gluten-free rolled oatmeal 
  • 2 tbsp. Coconut oil


  • 1/2 c. Organic pink grapefruit juice or freshly squeezed grapefruit juice
  • 1/2 c. Coconut cream
  • 1/3 c. Maple syrup
  • 1 tsp. Coconut oil
  • 1/8th tsp. Beet powder*
  • ¼ tsp. Himalayan pink salt
  • 2 tsp. Agar agar


  1. Start by soaking the medjool dates in a bowl of boiling water for 10 minutes to soften. 
  2. Then in a blender, blend the popcorn kernels to break into smaller pieces.
  3. Next add the soaked dates, ground flaxseeds, almond flour, gluten-free rolled oats, and coconut oil to the blender and blend to form a sticky paste. You may need to scrape down the sides of the blender and blend again. 
  4. Spray 5, 6” mini tart pans with non-stick avocado or coconut oil and transfer the crust mixture evenly to the tart pans. Press the crust mixture down firmly into each pan to build the crust and set aside while making the filling. 
  5. In a medium saucepan combine grapefruit juice and coconut cream. Bring to a low boil and then add in maple syrup and coconut oil. 
  6. Whisk in beet powder, salt, and agar agar. Add the agar agar in slowly and whisk continuously to avoid any lumps. Reduce heat and continue to stir until the filling mixture begins to thicken. 
  7. Remove the filling mixture from the heat source and allow it to cool for 5 minutes. You want the mixture to cool and thicken but remain in liquid form. 
  8. Fill each tart pan evenly with the grapefruit filling mixture. 
  9. If there are any bubbles on the surface of the tarts use a needle to pop them before the mixture sets. 
  10. Transfer the tarts to the fridge to finish cooling for 2 hours. Remove the tarts from the fridge, top with additional fruit and/or more popcorn and serve! 

  * Beet powder is optional and only changes the color.
